You can also just do Steamed Rice like Hong Kong restaurants do. Super fluffy

Ive found you have to fry the katchup first otherwise the rice gets all stuck together and kinda mushy. I fry my garlic and onions for a few seconds then add the katchup and fry it untill all the oil is absorbed. It turns out ok but never as good as my favorite restaraunt here in houston, Sinh Sinh. Omg its delicious. Its an appetiser they call steak tips and french fried rice.

I actually always just use fresh cooked rice, throw it in the freezer for an hour, stir every 10 minutes. This is way faster!

I grew up on my mom's hotdog fried rice and my sisters ketchup fried rice. Together they are even better.

I like to use a little less water than suggested on the bag to get the rice at that same level. Usually if it's a 2 to 1 ratio, I'll use about 1⅔ to 1 instead. Works like a charm!

Overnight rice is still the best to cook fried rice. This ain't Asian fried rice. It is so Americanize.
