But how did this enemy change in terms of gameplay, use story and design throughout the years?

I wonder if there are regular creatures called Chomps,
which are wild undomesticated chain chomps,
but have no chain because the chain was added by bowser.
They are animals, but robotic clones of them are made in factories.

Chain chomps also appeared in Super Mario RPG. In that game, they appear in Booster's Tower and are there to hinder the player's progress. There is one chain chomp in particular that is Bowser's pet and if you rescue it, it becomes a weapon for Bowser.

Glad you gave a nod, ever so slight, to the purpose Super Mario RPG's Chain Chomps. They were an obstacle, enemy and potential weapon. There was even one that you could find that was weapon for Bowser, who "helps her out" off screen because "she is shy." I guess he showed her some empathy... or maybe he helped her with something else. Either way, you get a powerful chain chomp as a weapon for Bowser.
