Nutritious white or Cannellini beans, rice, seasonings and fresh herbs make this Italian inspired vegetarian recipe a quick and delicious option to your busy day! This recipe is made with Cannellini beans however you can substitute Great White Northern beans as well. High in fiber and protein this vegetarian dish only takes 15min to make which makes it a perfect dish for lunch or to end the day.
Ingredients
● 1 (15 ounce) cans cannellini beans, drained and rinsed
● 2 tablespoons extra virgin olive oil
● ¼ cup yellow onion, minced
● 2 garlic cloves, finely sliced or minced
● 2 tablespoons fresh lemon juice
● 1/4 teaspoon salt
● 1/4 teaspoon pepper
● 1/4 teaspoon Adobe seasoning
● 1/4 teaspoon onion powder
● ¼ cup parmesan cheese
● ¼ cup chopped fresh parsley (optional)
● 1 tablespoon of butter
● 1 cup rice
Preparation
1. RICE: Bring a large pot of lightly salted water to a boil.
2. Stir in the rice and bring it to a low simmer and cover. Urn the heat to slow and keep the rice at a low simmer. Stir half way. Cook for 17min (up to 25min for larger quantity of rice)
3. Turn the heat off and let the rice absorb remaining water and then remove the lid and fluff with a fork.
4. While the rice is cooking, heat the oil in a large skillet.
5. Add the onion and garlic and cook about 2 minutes stirring frequently
6. Add the beans, salt, Adobe, pepper, onion powder, lemon juice and mix. Cook for about 4 min. Stir.
7. Flip the beans over and add the butter. Mix the butter as it melts with the beans.
8. Sprinkle the parmesan cheese over the top of the beans and cook another 3-4 min until the beans start to look slightly browned.
9. Remove the beans from the heat. Place the rice on a large plate and pour the beans over the top of the rice and garnish with the fresh parsley (optional) and serve
Tip
You can substitute brown rice
Ready in: 15 minutes
