Who doesn't love a good Sloppy Joe. This Indian street food recipe is a reminder that the same idea will come up in different places. Similar concept and a lot more flavor going on. Add good condiments and pimp up your buns. This is Keema Pav - Keema meaning ground meat and Pav originating from the Portuguese word Pau, which means bread. After the Portuguese introduced fluffy European style bread to India, of course someone would turn it into street food. What's not to like!

Ingredients for 4 portions:

1 lbs (400g) ground meat - beef, lamb or whatever you like. Preferably use a red meat although the others will work too.
4 oz frozen peas
1 mild green pepper or any kind of bell pepper, about 3 to 4 oz (100g)
1 red onion diced fine
7oz (200g) crushed tomatoes or 3 tbs (50g) of tomato paste
1 ½ tbs Ginger Garlic Paste (either homemade as shown or from a jar)
1 hot green chili like a Serrano or of course some Asisan hot green chili - cut in half lengthwise
About 3 oz (100ml) water
Ghee or fat of choice for roasting

Spice mix:
1 indian bay leaf (optional, I didn't have any)
1 tsp cumin seed ground
½ tsp black pepper crushed
1 tsp corriander ground
1/2 tsp turmeric ground
1 tsp red chili powder (or red chili flakes will work too)
½ tsp garam masala
1 tsp salt (or to taste)
½ tsp dried mint (or content of a mint tea teabag)

Quick Pickled Onions:
1/2 red onion sliced fine
3 oz water
2 oz vinegar
1 tsp salt
1 tsp sugar

Raita:
6 oz (150g) yogurt (greek or regular)
6 oz (150g) sour cream
6 oz cucumber grated fine (fine side of box grater, press out excess liquid)
1 clove of garlic, crushed
2 spring onions chopped fine
1/2 bunch of cilantro chopped fine (or parsley if you don't like cilantro)
1/2 bunch of mint chopped fine
1 tsp cumin ground
1 tsp mustard ground
1 tsp corriander ground
Salt and Pepper to taste (white pepper gives a nice floral note)

Pimp the buns:
1 tbs butter
1 tsp paprika ground
½ tsp garam masala

Garnish:
Cilantro or Parsley leaves
Lime Juice
Onion rings or (quick) pickled onion
or a fruity indian pickle like a mango pickle

Method:
➡️ Start with the quick pickle: mix the brine ingredients and add your thinly sliced red onions. Make sure everything is submerged, set aside until serving
➡️ Mix the Raita ingredients together. Refrigerate until serving
➡️ Assemble the spice mix.
➡️ Prepare the chopped ingredients for the Keema Pav
➡️ Add ghee or fat of choice to a preheated pan. Add the onions and sautee until translucent
➡️ Add the garlic ginger paste and the spice mix
➡️ Cook on medium for a minute or two until nice and fraguant
➡️ Add the tomato paste if using. Tomato paste likes heat, so if using paste let it roast for a minute or two.
➡️ Add the meat
➡️ Add the crushed tomatoes if not using tomato paste.
➡️ Add a shot of water if not using crushed tomatoes - the tomatoes bring a lot of moisture so adjust with water so it's "sloppy"
➡️ Add the halved hot pepper (of course you can omit that if you don't want it too spicy)
➡️ Cover and let simmer for a few minutes until everything is nicely cooked. Take off the heat and set aside

➡️ Heat a large pan, griddle or comal
➡️ add butter or ghee and the paprika and garam masala
➡️ mix well
➡️ roast your buns in that fatty mixture until nice and golden brown

➡️ Assemble according to the video
➡️ Enjoy
