IMO...unless you are competing, weight of bike don't matter too much relative to your fitness. Just need a good looking bike, good bike fit and 11 speed gearing with hill climb ratios.

I have 5 bike! high end 29er MTB carbon, high end road carbon, budget road alu, mid range 26 MTB (my good old frankenbike) and a cromoly gravel bike. The best bike is the bike you ride at the moment. I would love to try titan and wood and bamboo and wathever else out there, but I will keep wy wife and my 2 young boys... lol

If I am in between bike frame sizes I am 6’2 is it better to go bigger or go smaller. I am looking at the specialized Roubaix. In between a 58 and a 61. Any advice?

um...the intro doesn't make any sense.
you say should you get steel, carbo, alloy...

steel IS an alloy - by definition ALL steel is alloy (it's an iron alloy) in bike alloys there is chromium/molybdenum - hence cro-mo steel as well as the carbon doping that makes iron steel)
the titanium and aluminum, while exist elementally (the element form of "steel" is iron), the material used for bikes are alloys (for ti typical aluminum/vanadiaum and for aluminum typically magnesium/silicon or sometimes zinc)
