Easy Dinner Idea: Bell Pepper Rolls with a Refreshing Lemon-Mint Drink 🍹

🫑 Ingredients:

• 3 large bell peppers
• 3.5 oz (100 g) cream cheese
• 5 oz (150 g) cottage cheese (I used “Boursin”)
• Handful of walnuts, chopped
• Small bunch of fresh dill, chopped
• 2 garlic cloves, minced
• Salt and pepper to taste

🫑 Instructions:

1. Prepare the peppers:
• Remove seeds and cut each pepper in half or quarters.
• Place on a baking sheet and bake in a preheated oven at 400°F (200°C) for 35 minutes.
• Remove from the oven and place in a covered pot to cool.
2. Make the filling:
• In a bowl, mix the cream cheese, cottage cheese, minced garlic, chopped walnuts, and dill. Season with salt and pepper to taste, and stir until well combined.
3. Assemble the rolls:
• Peel the skin from the cooled peppers. Add a spoonful of filling onto each piece and roll it up. Garnish with a sprig of dill if desired.

🍹 Refreshing Drink

• Squeeze half a lemon into a glass, add ice, mineral water, and a few sprigs of fresh mint.
