Save this recipe if you need an easy dish to serve for the 4th of July weekend! This mexican street corn salad🌽 was so bomb. The fresh garnishes look beautiful and appetizing on the table.
Recipe for 10-12 servings:
8 ears of corn (2 extra for garnish)
2 pint cherry tomatoes
3 Avocados
2 bunches cilantro
Boil corn for 10mins, drain and once cook then remove corn from the cob and chop up above ingredients.
Dressing:
2/3 cup sour cream
2/3 cup mayonnaise
2 T chopped garlic
1/2t salt
1T chili powder
*also added 1t paprika, 1t onion powder
Sprinkle Cotija cheese till covered and garnish with cut limes, cilantro and extra corn cobs
You can cut up everything the night before and just make the dressing and garnish the day you serve. Chill and enjoy ☺️
