Mitarashi dango | Rice dumplings with sweet soy sauce
●Ingredients
Dango
-Shiratama flour : 100 g /3.52 oz
-Firm tofu : 120 g / 4.23 oz
Sweet soy sauce
-Soy sauce : 1 Tbsp
-Sweet cooking sake : 2 Tbsp
-Brown sugar : 2 Tbsp
-Water : 1 Tbsp
-Potato starch : 1 Tbsp
●How to cook (Recipe)
1. Mash firm tofu
2. Mix firm tofu and shiratama flour
3. Knead until the dough becomes smooth
4. Shape into a nice smooth round ball
5. Boil dumplings until floated
6. Transfer the dumplings into iced water
7. Skewer four pieces into a bamboo skewer
8. Brown the surface of dango
9. Heat soy sauce, sweet cooking sake, sugar, potato starch with water
10. Pour the sweet soy glaze on top
