Vegeta doesn't take Trunk's hand for help to get up because that was the core his his message to his son. He shouldn't rely on seeking help, he needs his own strength to make him get up.

Notice how Trunks was about to cry from Vegeta’s words to him. Last time they saw each other Vegeta never really cared about Trunks and only wanted to be stronger than everyone. Now Vegeta is demanding his son to surpass everyone, including himself, showing how he now takes great pride in Trunks.

Future Trunks didn't get to have these moments in his timeline. He's not jus grateful for the lessons, he's also grateful that he has a father to even teach these lessons

Vegeta was strict and harsh towards Future Trunks because he was the only person left in his timeline so Vegeta wanted to prepare him to grow stronger so that Trunks could deal with future threats without having to keep relying on him or Goku.

Having said that, Vegeta’s mindset had also changed. Although his desire to surpass Goku was still there, he no longer obsessed with it. Whether if he did surpassed his longtime friend/rival or not, this is no longer his main goal in life. He will still continue to get stronger because he had a home and family to protect and they now come first before his Saiyan pride. Plus he now also know Goku isn’t the strongest in the universe so he kept training to grow stronger to deal with future threats to Earth.
