Hundreds and hundreds of folks have build Factory Five Kit Cars with no prior mechanical assembly experience except for for a BBQ or IKEA furniture. With the improvements Factory Five had made to the kit over the past 15 years it's easier than ever.

Jim, my background is industrial safety and ergonomics. I am sure you can learn everything you need to. Having built race cars and custom cars, my concern is moving 100# lumps of materials. Even with mechanical lifting equipment, moving an engine block, even a short block is ugly.
Generate a list of friends you call upon to share moving things. Beyond 50#, almost everyone, exposures themselves to nasty back or shoulder injury. My thoughts.
