I always buy multiple of the rotisserie chicken and once cooled I pull it off the bone and put all of it in the fridge to use for the week in meals. Its so flavorful and easy for a quick dinner.

The only problem I see with keeping a cooler bag in the car is that the car inside can often soar in temperature in the summer thus negating the cooling ability.
