You are a born teacher. Excellent demonstration. I cheat by using a food processor with a dough hook, and I love my pasta machine instead of rolling and cutting by hand. If you don't have a drying rack, a broom handle ( wipe it off first) between 2 chairs will work. Homemade pasta is in a different ballpark than the box kind. No comparison. Love your videos.:o)

Mr. Hazan,  I bought your book, 'The classic Pasta Cookbook'.  I love the instructions and recipes; they are awesome.  I noticed that the instructions you give here are slightly different.  I have been making pasta recipes from your book the last week and my family loves them.  However, my dough never seems to come out quite the way it looks in your book.  Now watching your videos I see where I went wrong.  Thank you for these.

Hi Giuliano, thanks for the really clear videos! I have a question: I don't have a pasta machine, so I use a rolling pin. It seems with a machine, the dough rolls to the next thickness immediately. However, when I use a rolling pin, my dough springs back a little after each pass, so it takes a while to get the correct thickness. Am I making my dough too elastic, or is the machine just more effective at rolling?

Lovely! I wish you could show us how to make tortellini. Also, some of your favorite ravioli and tortellini fillings. Embarrassingly, I don't have a great tomato pasta sauce recipe. I know! My family has to suffer through Prego. (hanging my head in shame...)
