Beet Cookies Gluten, Dairy Free

A bit of a new take on the Potato Chip cookie. These Beet Cookies are delicious and they are so pretty on a serving plate. It is always fun baking cookies, why not impress your gluten or gluten free friends with these cookies. It took me a long time to feel comfortable baking gluten free cookies, I have ended up with a lot of crumbs. These cookies hold up well just let them cool.
