Valentines Beet Cookies
It's not a secret that I love beetroots 🥰But, whether it be in a drink, a sweet or savory they turn out magically supeeer! Plus with so many healthy benefits that effect blood pressure, diabetes dementia...this little red veggie is a valuable asset to any diet. Beets and crunchy peanut butter combine with oats to make a vibrant purple crunchy cookies. The flavour of the beetroot fades away in these moist, crunchy and chewy cookies.

Valentines Beet Cookies
20 pieces
Ingredients :
140 gr Pureed from roasted Beets
150 gr plain flour (all purpose)
100 gr porridge oats
1 teaspoon baking powder
¼ tsp salt
80 gr crunchy peanut butter
40 gr butter or margarine softened
100 gr light brown sugar
40 gr granulated light brown sugar
1 egg
1 ½ tsp vanilla essence
40 gr white chocolate
Preparation:
Preheat oven to 180C. Line a baking sheet with baking parchment paper.
Add peanut butter and brown sugar to a bowl and beat well until smooth and cream. Now add the egg and beat well. Add the salt, vanilla and beetroot and beat well. Stir in the baking powder and flour. Now add the oats and combine.
Cover the mixture and set aside for 30 min. Drop tablespoons of the mixture onto a heart shaped cookie cutter and flatten slightly. With knife help the cookie fall into the prepared baking sheet. Bake for 12 minutes and allow them to cool. Then decorate them with melted white chocolate.
