The glass should be clean
On a branded glass, pour to the golden harp at a 45⁰ then level off until to the golden harp again.
Let it settle
Then push backwards until done

Never rinse a glass right before pouring a stout! Clean, rinse and let it dry completely as even a small amount of water residue will create bubbles in the head and it will be foamy instead of creamy.

I work in an Irish pub. No rinsing the glass. This is what I've been told by guinness. If you wash you will not get the "stick" or a solid coating of white down the side of the glass. Also didn't use a branded glass and drank before settled. Proper first gulp.
