To cut the neck to small piece is really a secret a good friend gave me, when I told him I was doing a cookbook and videos for youtube on the internet. Not I share it you. People run with the idea. It really works! It eat and taste like oxtail when the neck turkey meat is cut small.

You should prepare everything way before the video, we shouldn't have to watch you chop/clean your meats and measure every single spice, makes the video long and boring, I got sleepy.
