BLACK BEAN SPARE RIBS RECIPE PT. 1

these black bean spare ribs are one of my absolute favorites at dim sum!! everytime im out for dim sum this is one of the dishes i HAVE to get. i was craving them so much that i decided to try and make my own.

Looks good, but you're missing a key step used by most cantonese chefs, which is a 30 min alkalai pre-brine with agitation that tenderizes the connective tissue and breaks down myoglobin BEFORE steaming.

THAT is the key missing step from many recipes that try to exemplify this dish.

I use homemade sodium carbonate for the alkalai. Also, just before steaming, I like to add some thinly sliced green jalapeno slices (unseeded) to the top of each portion. The perfect garnish for this dish.
