And the huge additional upside beyond taste and texture is that tallow is actually very healthy while "vegetable" (seed) oils are very unhealthy.

Beef tallow was used for the original and greatest McDonald's French Fries. A millionaire forced them to switch to vegetable oil because he claimed it was safer. Tests later showed that not to be true.
