Glad you mentioned creamed honey, David. Growing up in Canada, I enjoyed it from a tub, perfect with peanut butter for a sandwich - or right on the spoon - yummy! Different texture than crystallized honey - it seemed like a treat. 🙂

We call it honey jelly. It is not nearly as messy when using in coffee or tea.

I only use my own honey or a fallow beekeepers honey . Because I know where it came from. And your videos are awesome.

Orange blossom honey is one of my favorites. I've only had California orange blossom honey. I've heard that west coast orange blossom is better than east coast. I'd love to have some of each to see for myself in a blind taste test. Bee geeks I swear!

A lot of honey has slightly different flavors because bees collect their food on different plants.
If your honey is crystalizing most likely you aren`t eating it at a very quick pace.Any health benefits won`t make a whole lot of difference to you anyhow.
If your honey comes from different countries you have to be concerned what is in the jar.
Best bet is to get it from local people, check the label.

I have bought real thick honey from a local beekeeper which never crystalized for some reason. Seemed to be a low water level I suspected. I have also found 50 year old honey from a great uncle which never crystalized. It was from his hives which is now Cape Canaveral and was primarily "saw palmettos". Very dark but great in my coffee. When I do get honey that crystalizes I put it in the oven with a pilot light to melt the crystals. So I am still curious why some of my local purchased honey stays clear and some crystalizes. Thanks for your vids

I follow a commercial bee keeper on line and noticed that he brings in 50 gal barrels from Canada to process. It made me realize that you really don't know what you're buying unless it's from someone local and honest.

HONEY NEVER GOES BAD. We have found 3000 year old honey with grains in it, the grains sprouted, we call them "ancient grains"
