I've harvested kale from 2nd year plants. They were still tasty and not bitter, although maybe not as tender as young plants. I garden in Zone 6A. I'm interested in other people's experience doing this.

It hadn’t even occurred to me (yet 😁) to freeze extra Kale. Thank you!! Important tip for me as I love Kale.

6B in the PNW. Grew a bunch of kale last year and it lasted all summer and fall BUT the pesky 'bugs' ate up a bunch and I was checking daily for unwelcome guests. This year I will be sure to create an environment to discourage pests by using a barrier made from PVC pipe, chicken wire, and netting.

Once you have frozen the kale, can you make chips out of that frozen kale?

i am thinking of turning my bedroom into an indoor winter garden and using my small den for a bedroom. the bedroom windows face east and south.. my concern is my electric bill . any advice or tips? i'm in zone a/b illinois

I'm in zone 8b. It was low 70s today so... it may be too late for kale planting and it is not readily available at local nurseries.
