💑 About Hercules Candy
Hercules Candy has been on Steve’s side of the family since 1910(ish). When he took over in the 70’s, he anticipated after 10 years of hard work, he could move the business out of the basement and into a real storefront. Unfortunately, it took until 2018 for that to happen, but hey at least it happened! Steve and Terry own the shop, Craig (the social media manager) is their son, Cara (wrapper and shipper extraordinaire who is poised to take over the shop one day) is their daughter and Leah (who doesn’t love being on camera and is very elusive) is their oldest daughter. Karen has been working for Hercules Candy since the twins (Craig and Cara) were about 6 months old and everybody else is a new recruit. Don’t forget to subscribe and hit the 🔔 for more videos!

I’d say hard candy by hand is the craziest and coolest method of candy ever but that’s just me, shout out to Lofty Pursuits

I have an idea that may help yall with this process. Please forgive me if this is weird but what if you used something that scoops with linear openings like a kitty litter scoop or a large-opening sieve to scoop them out of the trays instead of using your hands? That way it’s scooped and sifted more before it makes it to the big sifter and it would catch the cremes and the tails instead of having to go back and get them after. I feel like it would cut your time by a fair amount having something bigger than your hands to scoop that also lets you rough sift it before you totally sift it with the big tray and brush instead of having to do it handful by handful like this. I saw one at the dollar tree and my first thought was “I wonder if this would scoop cremes as easily as my brain is picturing it could” I hope this helps (and sorry again if the idea is weird lol)

The cornstarch method is an old classic technique. Now a days you can get hollow chocolate truffle shell that you can fill. Or if your filling is thicker, you can roll it by hand. Or pour a filling in a flat square container, let set, then cut into squares and dip into chocolate.
