My personal theory is that the Shapeshifter is somewhat aware of the other timelines where the Pines twins don't return home (referenced in the Book of Bill), and happened to remember a timeline where Pacifica didn't open the town gate, basically telling Dipper about that timeline either as intimidation, or they got the timelines wrong.

I see to potential canon explanations
1. The shape shifter the screaming pose that dipper instinctively would
2. Dipper thought he'd die and subconsciously remembered the shape shifter

I heard 2 theories
1) why he was "wrong"- je just looked at his life into future to the point where his heart stopped beating, and didn't asume he could be bring back to life
2) my fav - he don't know the future, but his copying not only look, but whole body and mind, so he knows how dipper would react

Or that could be just one of common instinct reactions to some situations, pain from bottom- reach up, pain- scream

I always believed that Pacifica wasn't supposed to open the door so the people of the town could get in, and that her decision changed how things were supposed to happen, as a way of telling the audience that you change your future if you are brave enough to take hard and drastic decisions in your life.

I read in a comment once that the shapeshifter could see as far into the future as the character it takes form of. So it looked to the nearest point in time when Dipper’s heart stopped beating, assuming this was when Dipper’s death was. I’ve heard other theories about alternative timelines described in the Book of Bill which may also have a connection here.

You're forgetting the other link between these two scenes: Dipper. The shapeshifter is really good at mimicry, to the point that dipper almost couldn't tell them apart from wendy until the Inconveniencing callback. It's possible that he had a good enough grasp of Dipper's mannerisms to accurately predict the type of pose they would take when screaming in fear- hence, what we see in Northwest Mansion Mystery.

Another point is that Dipper’s clothes are completely different. Maybe Dipper just thought that was the moment the shapeshifter meant and went ‘welp, this is my destiny. Might as well give in to the prophecy.’ And assumed the death pose? Then again, there are quite a few plot holes in Gravity Falls (the baby/shermie, literally nobody realising that Stanley took Ford’s identity, what happened to fiddleford’s wife, etc.) so it might just be one of those things.

As interesting as it may be, I think canonically it's just a coincidence. The shapeshifter just made himself do the "dying" pose and scream that he would reasonably expect Dipper to do should he meet a similar fate and Dipper did that pose and a similar enough scream. I don't think it's really a stretch to say that the shapeshifter was partly right without having to see the future, especially about a relatively simple prediction

I think the shapeshifter is perhaps mildly psychic. Like, he's already shown to by being able to mimic people's personalities to a believable degree even though he has barely met them. But no so good that he would know specific details like how Wendy signaled she was the real one. Likewise, he might be able to see vague images of the future, but not the entire future, or the full context of what he's seeing.

I mean in the real life Journal Three, Ford writes about how he eventually learns about the aliens that crashed into Gravity Falls, apparently beings that can observe seven dimensions at once, which was what made them such bad drivers. So perhaps since the Shapeshifter was on board this ship, even if he’s not the same species, it means there’s a non zero chance that perhaps he can similarly see into multiple dimensions at once (perhaps including Time?) which can allow him to see things like this

I thought the idea was that Dipper DID die, and him getting turned back to normal is the equivalent of making a new identical Dipper.

Look into the philosophical problems with teleportation to get what I'm talking about. What if you had a teleporter that disassembled your atoms and put them somewhere else? Did it really transport you? Or did it kill you and make an identical clone of you?

Maybe the shapeshifter couldn't predict anything and just thought "if I'm going to be cryogenized by this child with sweat problems at least I'm going to traumatize him a little, " and he put on a death pose.

That's just how Dipper screams when he's in that much peril, pretty much. It's not like there was a true "prediction" there, the shapeshifter just essentially said "You will have your arms up and be screaming" and then he does it in a different episode with a situation where it's called for.
