AMAZING VEGAN BURRITO & BOWL RECIPE 🔥🌯

Burrito's should be a staple in everyones diet! So today I show you how to make this high protein but insanely delicious burrito and burrito bowl at home. It's also super healthy!

RECIPE

Seasoned Rice
2 Cups Brown Rice
2 Cups Water (or veggie broth)
1/2 Cup Salsa
(*Add more water if needed)
Cook for 45 minutes or until done

Pico De Gallo (large batch)
4 large tomatoes
Juice of 2 limes
1/2 a red onion
1/2 cup chopped cilantro
1/4 - 1/2 tsp of salt
optional: Serrano peppers

In a large bowl, add diced tomatoes, lime juice, diced onion, cilantro and salt. Mix together and set aside for at least 15 minutes.

Sautéed Veggies
1/2 red onion, sliced
1/2 Red Bell Pepper, sliced
1/2 Green Bell Pepper, sliced
1/2 tsp garlic powder
1/2 tsp onion powder
Sauté with a tbsp of water until cooked

Never-fried Re-fried Black Beans
2 cans of black beans (drained and rinsed)
1/4-1/4 cup of water (salsa or veggie broth works too)
1 tsp of garlic powder
1 tsp onion powder
1 tsp cumin
1 tsp chili spice
1/4 cup jalapeno slices
2-3 tbsp nutritional yeast
Salt to taste

Mash beans in a sauce pan with water and the rest of the ingredients. Sauté for 10-15 minutes. Add the cooked beans, rice, pico de gallo, with some greens to a wrap or bowl.

Tortilla Shell I used - Bake Stone Brothers (purple wheat, kale and quinoa) wraps.

Mexican pro tip: chop the onions first, then add the jalapeños, Salt and lemon, then you can take your time with tomatoes and cilantro, that way you can eat the Pico de gallo almost instantly... 😉💪

If u want Mexican Grandma secrets to red rice:
In your pot that u will do ur rice in:
Over med heat
Throw some oil or broth, throw in half a onion, 1 garlic, 1 jalapeño(jalapeño optional).
After like 2 min throw in raw rice and move it around till it's all yellowish (NOT BURNT) should only take a couple of minutes.
Throw in ur red sauce from ur video(it will steam all crazy but THATS OK) stir that around for a couple of seconds coating all ur rice.(if no red seasoned sauce use about 3/4 of a small tomato sauce can, vegan bouilian(use the most of all spices), a bit of salt, pepper, and a tiny bit of cumin.TASTE the water.how broth taste is how ur rice will taste)
Then add HOT water, bring to a boil and after like a min, take down to low heat and cover it. OPEN IN 15 min to see if the water has evaporated if not give it 2 min increments until water is gone. Then turn off take off of the burner and KEEP IT THE TOP ON for another 5 min. Then SHABAAAAM - Mexican Rice in Canada 😊 yes it's long but you've helped me with so many recipies and appreciate it so much 👍
