Turning the witch into stone was probably an act of mercy, considering that the alternative was to let the two bears, two wolves, and two lions rip the witch to shreds.

Heard of many variations of this, interesting how stories travel around! For instance one of the variations had the two brothers put a knife in the tree and when it was rusted it meant he had died.
