King of Caribbean food Levi Roots kick starts summer with this awesome Jerk Chicken recipe.
Pieces of chicken marinated in spicy pimento, chilli flakes and the famously hot Scotch Bonnet chilli - this dish is not for wimps! Get in the party mood and make a batch for your friends this weekend. Just have a jug of milk on hand!

At long last there's a recipe on Food Tube that doesn't cautiously introduce its viewers to a single carefully chopped peperoni & like "but you can take out the seeds and the white pith to make it less hot" but straight away goes for chili flakes AND TWO SCOTCH BONNETS big-time stylee! I like! :)

Wonderful stuff mate...LOVE it when you get cooking with a friend of yours! One small question though...if you can't obtain Scotch Bonnet chillies, could you use Habanero chillies instead?

I add a bit of dark and light soya sauce to this instead of salt. Gives it a better depth of flavour

Love the way to get the best jerk chicken is with Jamie Oliver and the one and only Levi Roots together. A easy and simple recipe for Jerk chicken. As I have friends who are from the Caribbean and they all would like this recipe. Will definitely try this recipe.
