They did it while they were injured (by their own will as they didn't want to hold up the shoot). Viggo Mortensen broke two toes when he kicked the helmet at the pyre when Aragorn, Legolas and Gimli think that Merry and Pippin were dead. Orlando Bloom had fallen off his horse during the Warg Fight and broke some of his ribs, and Brett Beattie had dislocated his knee. Peter Jackson called the three The Walking Wounded.

John Rhys-Davies said that he really felt sorry for Brett, because he was carrying a lot of extra weight due to Gimli's armor..in reality, John is even taller and Orlando Bloom. On close-ups when you see him "standing" between Orlando and Aragon, he is on his knees. :)

This is one of the many reasons why The Hobbit movies SUCKED by comparison. Very little CG overall in LOTR vs nothing but CG in The Hobbit.
