I just bought the book "the CSIRO low carb diet".
I was surprised that they say "saturated fat" should be reduced.
Saturated fat from animals, butter, lard etc is healthy and very stable.
Polyunsaturated fat, mainly from highly processed seed oils, is unstable and is easily rancid, and is high in omega 6, which has the effect of making LDL sticky and clogging arteries i.e. heart disease.
Before seed oil (vegetable oil) was common, the 1900's, heart attacks were vary rare.
