I can't wait to try the caramelised chocolate as a ganache. What would the chocolate/cream ratio be if piping the ganache onto cupcakes please? I also want to try it on a no bake cheesecake.

I'd like some tips on how you make the tart cases look so perfect. Mine always taste great but I always get shrinkage and uneven edges whatever I do. Look forward to seeing your video.

Hey Ed. These look so good. One thing though. Tarts made in rings always look far better than those in fluted tins. However they look (for me) impossible to make - to roll the pastry, to add to the ring WITH NO BOTTOM and put on a tray into the oven without ruining the base. Any tips?
