Valle Latina never left Europe ... it's still located there, heck it's not even part of Iberia Hispania (Spain or Portugal). So as I see it, LatinX can mean what you want it too. You may as well make up anything you want -- For those of you who care, Latine is gender natural form Latinus / Latini. However none of these terms have anything to do with mesoamericans.

I dont know any word in Spanish that has an English sounding X, it makes an H sound in Spanish so it would just be “latinh”

The X looks like it borrows from the black muslims of the 1960s in the US who discarded surnames in favor of X. Thus, you had Malcolm X, etc.
