World's Best Jerky

How to make Beef Jerky with the the most amazing flavor. Deep rich steak like taste and relatively tender as well. My best jerky recipe is a result of many years of testing, and eating loads of beef jerky. The key is to start with a nice marbled fatty meat, and follow the recipe and smoking technique. Bon Appétit!

Recipe:
3lb Tritip roast with fat cap sliced
2c Kikoman soy sauce
2 TB Wrights liquid smoke
Blend wet ingredients with meat

Rub
1TB Kosher Salt
1/2 TB Brown Sugar
1/2 TB Black Pepper
1/2 TSP Garlic Powder
1/2 TSP Onion Powder
1/8 TSP Cayenne Pepper
Sprinkle all of rub on meat

Preheat smoker to 275 F, place meat in smoker on racks and reduce heat to 160F. Smoke with 70/30 blend hickory and mesquite. After 30-40 min reduce heat to 130F. Using fan induction method this takes about 3 hours.

I used to live in South Africa where jerky is called Biltong.
They have the greatest variety in the world, and it’s available everywhere.
I like their Droewors.

Way to go! I ate a big bowl of cheerios and could barely finish. 5 minutes later, I'm watching you and already hungry again. I've looked at smokers before but just figure I won't use it enough. Thanks for posting.

We have only, I guess seeing this in our supermarkets for about the last five years .Never tried it but it looks great and light weight for bush walking .I must give it a try, I will share this around, Bradley from Tassie Australia. Cheers..

_Great vid. That's a really nice smoker Matt. Back in the early 70's I remember my Dad using the old full size phone booth w/bi-folding door, that was outside of my Grandfather's old Country Store, as his Smoker only, not as a Cooker. He could hang large sizes of different meats in it. Now for the Jerky, he had his own marinade that was very similar to Fondue marinade. He let that soak over night._

_We didn't have a dehydrator. After we finished smoking the sliced brisket for a half hour, we would bring it back across the road to our house and dust the strips, stick a toothpick through 1 end of each strip, hang the strips in the oven, set the oven on the lowest setting and prop the oven door open about an inch. 12hrs later we had some really good jerky. 20lbs of Brisket yielded only about 3lbs (I'm guessing) of jerky._

_The phone booth was actually a working phone booth. Yeah even after he would clean it, the glass still had a bronze tint and the phone receiver was always extra smokey. Southern Bell was most displeased, but didn't remove it until 1980._

That looks delicious! I like it that you're branching out into more than just flashlight videos. Flashlights are cool, but they don't taste very good.
