A pork roast might just be the easiest thing you can make for dinner. Put it in a pan, put that pan in the oven, and you're practically done! We gussied this one up a bit by adding two seasonal ingredients: Apples and sweet potatoes. Tossed with a bit of olive oil and seasoned with salt and pepper, they roast in the pan right along side the pork roast.

Recipe Ingredients:
4 teaspoons olive oil, divided
1 pork roast (2 1/2 pounds), tied at 1-inch intervals
Salt and pepper
3 Gala apples, quartered
2 sweet potatoes, cut into 1/2-inch wedges

Sarah, do you know of a gluten free flour I can use . I am sensitive to gluten.

I think it's just to make sure everything is even. Don't think it's a mandatory step, just ensures that the whole roast is circular instead of ovular (? is that even a word)... that's just my guess though. especially since she only recommends cooking it to 138 (so it reaches 145 after carryover heat).

Why Can't women take off their jewelry while preparing food??? Especially since she runs her own Resto. It Looks great but my EX WIFE did the same thing and it drove me up the wall. I just kept thinking of all that bacteria under the rings... and she was playing with the PORK.
