Although cassava flour and tapioca starch come from the yuca root, they are actually two different byproducts of the same process: Grind up or, better yet, blend the yuca root in some water, then strain the mixture through a fine cloth, squeezing as much of the liquid as possible. The residue in the cloth is allowed to dry (in sun or dehydrator); that is the cassava flour. Let the strained liquid sit for several hours; decant the clear water after the starch settles. Let that starch dry; this is the tapioca flour or starch. If you buy both products and put them side by side on a dark plate or surface, you will notice that the tapioca flour/starch is whiter and finer in texture, similar to corn starch. The cassava flour has a cream color hint and is coarser. Hope this is helpful:)

Thanks. I saw a recipe on youtube I want to try, using Tapioca flour cheese and milk and thats all I remember, and bake, yum. Lol. So I l looked up what it is compared to self rising flour and another flour came up. So I still was unsure, , until your video. I learned plenty. Hurray. Mayne I wont jack it up. Doubt it but im hopeful.

Another important distinction to make would be between cassava flour and tapioca flour/starch. Cassava flour contains parts of the root (it is more fibrous) whereas tapioca is only starch.

Where I'm from we call it cassava or mayuck. We just add it to soups as you would potatoes. We also make farine out of it and have is for breakfast. Farine is most compared to grits or cornmeal.
It has a plain flavor which is good to work with for many foods and dishes.
