If you hone the kitchen knife on a steel, the edge will look like molten glass. Kind of a neat contrast where the smoothed surface from honing meets the lines from sharpening/grinding.

The look of the knife edge really depends on the knife and how it was sharpened.

Different steels have different hardness and grain size which makes a difference and if the knife is very well polished at the edge it should look pretty clean.

By sharpen I don't mean using a honing rod, for me I mean whetstone sharpening.
