Rick Bayless Staff Trip: Mole Class with Reyna Mendoza

We've brought our staff to El Sabor Zapoteco in Teotitlán del Valle just outside Oaxaca for a hands-on lesson in making mole, the mother sauce of Oaxacan cuisine. So much to learn while achieving the perfect symphony of flavors!

Just had a Yucatán mole the other night. Wow!

I'm sure these are out of this world, and out of my league, but I didn't often enjoy mole in Mexico. It's usually served for big groups, you get a chicken thigh with bones and skin, rice on side, on a thin styrofoam plate that you have to manage with a wimpy plastic fork. Difficult to do at a wedding, in a nice dress or suit.
