Braised chicken & kale 🥬

Basically a super easy way to get a power veggie into your dinner with tons of flavor.

4-6 chicken drumsticks (or any dark meat piece)
1 tsp Kosher salt
1/4 tsp Black pepper
1 tsp Garlic powder
1 tsp Smoked paprika
1 tsp dried parsley
1 tbsp Cilantro based green seasoning (store bought)
1 tsp sofrito
2 cups of chopped kale or more to taste
1/2 an onion, sliced
2 large cloves of garlic minced
1/2 a green bell pepper, chopped
1/2 cup Coconut milk
1-2 cups Water
Grape seed oil

For some heat add red pepper flakes *optional

Method:
Season chicken and sear in grape seed oil on medium high heat on both sides. About 3 minutes per side.

Remove chicken and set aside. Sauté onion and bell pepper for 2 minutes in the same oil from the pan.

After two minutes add garlic, sofrito and chicken back to the pan and add a cup of water.

Allow water to come to a simmer then turn the heat to medium low and allow chicken to cook for about 15 minutes, checking on it after 10 minutes. Add more water if necessary if the water is evaporating too fast. You need the liquid for braising the chicken & kale.

After 10 minutes add kale on top of chicken and season to taste with salt, pepper & garlic powder. Add about 1/2 a cup of coconut milk and another splash of water to cook kale.

Kale is done when soft to the bite and chicken is done done when the meat is pulling away from the bone.

Serve over your choice of grain or alone.
