Except briarhearts are already dead to begin with, they're revived through a hagraven ritual where the plant replaces the heart

You can also do it in normal skyrim by shouting at them with unrelenting force and going up to pickpocket them you can easily rip out their heart without sneaking

And even in the original release of Skyrim that heart is gone when you loot it from their body.

I literally do that with every Briarheart I come across. Sneak up on them, go through their inventory and then I just eat the briar heart right out of their inventory.
