Just preparing scoops of ice cream in cupcake papers is a good idea. Portion control, no struggling with that gallon of frozen concrete, papers could match the cake and be pre sprinkled looking super cute.

Also could pipe softened ice cream into the cone afer it's been decorated, leaving about a 1/2" for the inverted cupcake, then freeze solid before putting them together.

as an adult i love the entire concept, the thought that goes into it despite being super simple and easy to make for any occasion that calls for it, you could even have a little tray full of toppings so when it comes time to put the ice cream into the cones everyone can put whatever they’d like on ‘em (i.e nuts, cherry on top, etc)!!
