LOW CARB Thanksgiving for One in under an hour

Rather than making multiple keto side dishes and desserts for Thanksgiving or Christmas Dinner, just make a single serve portion! Ideal for anyone gathering with friends and family who aren't keto. In this video, I show you how to make an entire low carb Thanksgiving dinner for one person in under an hour.

KETO ROLLS
1 tablespoon heavy cream
1/4 teaspoon dry active yeast
1/2 cup almond flour
1 T oat fiber
1/2 teaspoon powdered allulose
1/4 teaspoon baking powder
1/8 teaspoon salt
1 T unsalted butter, softened
1 egg white
1 teaspoon sour cream
1/2 teaspoon psyllium husk powder + 1 T warm water

1. Heat heavy cream in microwave for 10 seconds. Let cool to 105-120 degrees F (ideally closer to 120). Add yeast, stir and let sit for 10 minutes.
2. To a small bowl add dry ingredients and stir to combine. Once yeast is ready, add butter, egg white, sour cream, yeast mixture.
3. In a small bowl, stir psyllium husk with warm water until gel forms then add to roll ingredients. Mix everything until combined.
4. With wet hands, shape into two balls. Place on a parchment lined air fryer tray or baking tray and let proof in a warm place for 30 minutes.
5. Mix another egg white with 1 tablespoon milk of choice and brush on rolls.
6. Bake in the air fryer at 350 degrees for 8-9 minutes or bake in the oven for 12-14 minutes. **Air fryers will vary on baking times.

KETO CRANBERRIES
1/2 - 1 T reduced sugar dried cranberries
1 tablespoon water

Add cranberries and water to a small bowl. Microwave for 30 seconds. Then cover with plastic wrap and let sit for at least 30 minutes before chopping up.

MASHED TURNIP
1 small turnip (70-100g)
1 tablespoon unsalted butter
1 tablespoon heavy cream
1/4 teaspoon salt
1/8 teaspoon pepper

Peel turnip and dice into small pieces. Add to a microwave safe dish and about 1/4 cup water or chicken broth. Cover with plastic wrap and microwave for 4-5 minutes or until softened and a fork can slide through. Drain. Add cooked turnips to blender or food processor. Add butter, cream and seasoning. Puree until smooth.

GRAVY
1 oz ground sausage
1/2 T unsalted butter
1/4 teaspoon arrowroot powder or egg yolk**
1 tablespoon heavy cream
3-4 tablespoons chicken broth
1/8 teaspoon pepper
1/8 teaspoon poultry seasoning
salt to taste

In a small skillet, add ground sausage. Cook over medium heat while breaking up until browned. Remove sausage, set aside for the stuffing. Melt butter in the skillet. Sprinkle in arrowroot powder. Add heavy cream and chicken broth. Whisk until thickened. Add seasoning.
** If using egg yolk, lower heat to medium low after butter is melted. Add heavy cream, chicken broth first. Stir, then add egg yolk. Stir continuously until gravy thickens.

KETO STUFFING
reserved cooked sausage
1/2 T unsalted butter
1/2 celery stick, sliced
1 tablespoon diced onion
1/2 - 1 clove garlic, minced
1 mushroom, diced
pinch salt, sage and thyme
1 tablespoons fresh chopped parsley
1 baked roll
1-2 tablespoons chicken broth

To a small skillet, add butter and let melt over medium heat. Stir in celery, onion, garlic and mushroom. Let cook until softened. Add cooked sausage, seasoning, parsley. Tear up roll and add to the skillet. Pour in chicken broth. Stir, remove from heat and cover to let roll pieces soak up the broth.

I have made a lot of your recipes over the years. Thanks so much for your inspiration! However, my family eats the things I have modified and loves it. This year I did a riced cauliflower casserole that was a mock of hash brown casserole! Everyone loved it! Cranberry orange salad with pecans and allulose as the sweetener! I am grateful not to have to make for one!😉

I agree with all the comments about freezing the fresh cranberries- super easy and they have a lot less sugar because you're using keto sweeteners. I never liked the gel stuff in the can, but mom always made a cranberry- orange relish that is delicious, and I've modified it to low carb. Fresh cranberries in the food processor with sugar substitute to taste, then I use a combo of Good Good low carb jam( raspberry works well) and sugar free jello, and mix in the cranberries. I then add a little apple( almost minced, so a tiny bit goes a loooong way), and a few pieces of no sugar added mandarin oranges( again, super small pieces- just enough to taste it) and chopped pecans. It's delicious! You can add the tiny choc zero marshmallows to really make it fun❤ OR make it feel more like a Waldorf type salad by adding some really stiff honemade whipped cream. Obviously you can't eat the whole bowl, although you will WANT to, lol, but it's very low carb, especially when you do your own cranberries❤❤
