Why are you shimming behind the hinge?
Serious question.

I’ve seen and done both methods.

My go to at this point is to shim above and below the hinge - so as to not screw through the shim and compromise the integrity of the shim. Also, if and when that home settles or that door shifts for whatever reason(because they almost always do) I can tighten my hinge screws w/o a shim keeping me from pulling the panel ever so slightly.

I like the good old fashioned shim method 👍.
I've seen the metal clip method, not a fan clip method.

Your wrong.
The door NEEDS TO be flush with DRYWALL.
THE framers or the drywall guys make the door set. When it's time for trim it needs to be tight
