The technique used instead of tongueing is the same idea as is used on the highland bagpipes. Using the fingers to break up the notes. One big reason for that on the bagpipes is because you can't tongue to stop the sound.

The kaval is actually Turkic and was brought to the Balkans by Turkish people. Turkic peoples such as the Uyghurs, Turkmens, Uzbeks, Kazakhs, and Kyrgyz all have their own varieties of the kaval. (Even though the kaval used in the Balkans is distinct from the Turkish one, as it has gone through its own evolution.)"
