Keto Doritos with Cottage Cheese
Ingredients:

1 cup full-fat cottage cheese (strained and blended until smooth)
1 cup almond flour
1/2 cup grated parmesan cheese
1 tbsp whey protein isolate (helps with crispiness)
1 tbsp psyllium husk powder (for binding and texture)
1 tbsp cheddar cheese powder (for authentic Doritos flavor)
1/2 tsp xanthan gum
1 tbsp olive oil
1 tsp smoked paprika (crucial for that Doritos nacho flavor)
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp chili powder
1/4 tsp salt
1/8 tsp cayenne pepper (optional, for a spicier kick)

Instructions:

Prepare the Cottage Cheese: Strain the cottage cheese to remove excess liquid and blend until smooth.

Mix Dry Ingredients: In a large bowl, combine almond flour, parmesan cheese, whey protein isolate, psyllium husk powder, cheddar cheese powder, xanthan gum, smoked paprika, garlic powder, onion powder, chili powder, salt, and cayenne pepper.

Combine Ingredients: Add the blended cottage cheese and olive oil to the dry ingredients. Mix thoroughly to form a dough.

Roll Out the Dough: Place the dough between two sheets of parchment paper and roll it out until very thin (the thinner, the crispier).

Cut and Shape: Cut the dough into triangle-shaped chips using a pizza cutter.

Bake or Fry:
Baking: Preheat the oven to 350°F (175°C). Place the chips on a parchment-lined baking sheet and bake for 12-15 minutes or until golden brown and crispy.
Frying: Heat avocado oil in a skillet over medium heat. Fry the chips in batches until golden brown, then drain on a paper towel.

Seasoning: Toss the chips in a mixture of cheddar cheese powder, smoked paprika, and additional salt to taste.

Cool and Store: Let the chips cool completely. Store in an airtight container for up to a week.

As a 75 year old, I can say, “You’re adorable!”. People who complain, try to drag others down, are just looking for company in their own, base level. Well adjusted, happy people just don’t do that. They’re to be pitied. We love your chatter, and your ‘either this will work or it won’t’ attitude is so refreshing because isn’t that how we all feel when trying something new? Screw the miserable hater’s! You do you! I like the way you cook. I’m new to Keto too. Some people just get out of bed looking to be miserable and try and take people down with them. They can go elsewhere and watch someone else. Don’t even give them attention.

As a chef of 30 years - if you wanted to mess around with the baked version - you could lightly spray them with avocado oil, and cook them lower and slower and longer to increase the "crisp" factor. Or the air -fryer.

Hi Dave, I'm 71rys old, a great cook and baker and I absolutely LOVE your channel. You never fail to make me smile (& laugh) and I love the keto recipes! You're adorable and I love knowing your wife is often off to the side just watching it all happen LOL. Ignore the morons. Some people have nothing better to do with their lives than to do their best to make others feel less then them. Tip; use cheesecloth to strain the cottage cheese. Double layer the cloth, put the cheese in the middle, tie up the ends, then hand the bag off the faucet with some string. In about an hour you'll have a lot of the moisture out without making a mess as with the paper towels.

For the baked ones to get crispy you should spray them with the avocado oil top of chips and bottom of tray. They get nice and crispy without having to fry them. Keep up the great work I love your content.😊❤😊

Just a cooking prep tip Dave, you can drain cottage cheese and regular yogurt using a paper coffee filter in a strainer.

Refreshing for this day and age. I am almost 60 and have been cooking all my life. A SALAD SPINNER IS THE BEST FOR DRAINING YOUR COTTAGE CHEESE great recipe, , , your great and seeing your daughter cook with you the other day was just lovely, , not enough parents include their children in the every day cooking for the home for fear things will get messy or fall and too much or too little ingredients, , , i think all these contribute to a child learning how to cook to be healthy and not fall victim to the standard american diet, would love to see her in more videos learning to cook along side her father

Dude! Don't even listen to the haters. I was on keto for about 9 months and it works. I lost about 45 pounds and put on muscle at the same time (working out of course). I then went off keto and have gained a lot more muscle but also fat again. I don't plan to go keto again but lower carb. People like you are helping! My time in ketosis wasn't "proper keto" but it worked all the same. Keep up the good work and don't get your blood boiled by keto "purists". IDGAF about pure keto or whatever they call it. I care about the results I get and being able to enjoy life.

As a rule, I do not comment reviews, especially NOT on YouTube. I'm only writing this because I see your hurt and dismay and I seek to encourage you. Dave...I have been a professional event planner for many years. I've catered and I've worked with some of the best in the business. When my caterers, or myself are doing the food prep...I've got expectations. In my own kitchen, not nearly as much. You are cooking for yourself, not the public, not to pass a health department inspection. Your kitchen is clean, you are clean.

I promise you most of the, I hesitate to call them critics, and insult real critics...so I'll take a term from TS, "Haters" are slobs, watching on their oversized phones instead of being in the moment of wherever they are, whatever they are doing (watching their children, spending time with their families, but instead, here they are, face in screen, eating out of bags with dirty hands, shoveling enough junk into their gullets to feed the disease process for ten). I know because I see them doing this at events where an individual has spent thousands to provide a memorable experience and instead they are head down, eyes on phone. They have no appreciation for real food, even when you attempt to emulate the fave "junk" food with a reasonable real food substitute.

I've done keto, I've done everything and I probably could be considered a professional dieter. Your point about sustainability is 100% spot on. The best diets do not work when one can stick to them long term. Diet that work but do not allow you to develop habits to continue for a lifetime fail. Most diets fail because even if weight is loss, one cannot stick to it. Or having lost the weight, goes back to eating and habits that got them overweight or obese in the first place. This doesn't work. "Definition of insanity: keep doing same thing, expecting different outcome." This defines most eating behavior, before, during and after any attempts at weight loss. You are trying to both learn, practice, and teach sustainable dietary changes to achieve your goals.

I've watched enough of your videos to know you are real, personable, and your commentary both furthers the purpose of the video and is entertaining and makes you watchable. You are not merely chatting to run up your watch count like 90% of the youtubers and tictoc jack@$$3# out there. I will not watch most of the so called pros with their click bait titles and being paid per click, paid for pushing product. Generally, if I only watch a video if I cannot find what I need in print to simply read. I hate watching these idiots and their so called influential behaviors. Your recipes TASTE good. You amuse me.

All of that said...people are bold when they are sitting behind the anonymity of a screen. Keyboard warriors are cowards. They will say anything but face to face, speak nothing... they are as Ray Bradbury writes in Fahrenheit 451: "Cram them full of noncombustible data, chock them so damned full of ‘facts’ they feel stuffed, but absolutely ‘brilliant’ with information. Then they’ll feel they’re thinking, they’ll get a sense of motion without moving. And they’ll be happy, because facts of that sort don’t change. Don’t give them any slippery stuff like philosophy or sociology to tie things up with. That way lies melancholy...We bombard people with sensation. That substitutes for thinking.”

You are using the screen to offer something of value from your own experience. Keep doing what you are doing.
