Gta physics and mission scripts are interfaring to each other in a weird fascinating way, if you remove the water Ryder still swims due to script but can't due to water missing.
Similar to many occasions where objects are missing but you still see the mission going through such as when road is glitching and cars are driving as usually.

There are alot of explanations of how you would still hear the water splashing after ryder jumps. But the most reasonable explanation is Ryder hit the MLG with a water bucket.
