I’m so happy you’re learning Polish! It’s a very hard language, but if you were able to learn English, you’re going to do great. I came from a Polish and Italian household, and I love the foods of both, although I cook much more Italian.

When my Father was very old I asked him if I could do something special for him. He asked me to make pierogis. I chased my wife and son out of the house and spent several hours in the kitchen making the boiled version just like Pasquale. My wife came home and said "So you didn't make the pierogis??" She couldn't believe how well I cleaned up after making about 100. I froze them so they would keep until reboiled. My Father told me they were the best pierogis he ever tasted. This was one of my many cherished memories with him. Pasquale brought the memory back. God bless Pasquale !!!

Very good recipe, it is very similar to pierogi we make in Poland. For a dough we use hot water - it's very important - warm water will help to make dough smooth, tender and consistent. Dough with eggs is great, but there's also variant without them - at my home we always prepare dough with an egg. We also soute onion on butter - some people like onion almost transparent, barely fried, other Poles like slightly brown'ish. We usually serve boiled pierogi in three ways:
- with sour cream (it isn't as thick as in this video, it's easily spreadable, more fluid); sometimes with finely chopped leaves of parsley/dill/chive,
- with chopped onion fried on butter or lard,
- with skwarki (Polish variant of pork scratchings) and melted lard or butter. There's also variant with finely chopped bacon/ham instead of skwarkl.

Pierogi (already cooked in water), when they are cold, you can also fry on a pan until they're gold'ish brown. Crunchy outside and soft inside. Yummy.
