Crazy delicious puree of sunchokes. This is probably the most refined thing (also soup) I know how to make from these special tubers. I go over a few different ways to make it in the video: peeled, unpeeled, and using a highspeed blender or a food processor.

The big takeaway here is that I recommend starting with the peeled or unpeeled version first. Delicious in small amounts as a side dish with fish, meat, mushrooms and more.

Where I used to work they had this sautéed gnocchi with Jerusalem artichoke purée, some steamed veggies (snow peas, broccolini, beans, and maybe zucchini or cucumber), with goats cheese, and toasted breadcrumbs and it was good! Definitely my favourite meal they served, it almost tasted like truffles though I don’t think there was any truffle oil in it, I’ve always wanted to recreate it but I never got the recipe, so thank you for the video! Super informative

I've read that it takes a 12 hour cook to transform inulin into sugar, I wonder if they could su vide these 12 hours and avoid flatulence

Have you ever tried fermenting sunchokes? I have been meaning to try it, I assume it would reduce the gassiness, but also really change the flavor. They might make good pickles though.

Can you boil the chokes for 30 mins first to reduce flatulence?

I have long sunchokes no need for peeling or can Peel very easily long no knobs
