Haven’t try this, but would like to add Jerusalem artichokes to garden, except heard many find the food easy and productive, but not very tasty. So glad to see a good recipe for them.

Yeees! So happy to find this recipe, I fell in love with similar soup. It was my first time to try Jerusalem artichoke, never heard of it, since it is really rare in Serbia.

Thanks for showing that they can be crispy fried, if cut thinnly enough.
I once tried to make patat with them. Too much moisture was realeased into the hot oil. I noticed that yours worked without soaking off any starch. Thanks for the recope.

I just grew these artichokes and was looking for ways to cook them…Wonder how the pear purée compliments the soup…will try but may not do the full garnish which is a bit of work

Chef Majke, did you know that the dutch name for jerusalem artichokes is earth-pears?
It's funny I was looking for recipes to cherish my small harvests, including j. artichokes and hard cooking-pears. This takes care of 2 things and the walnuts that I already have.

I had a technical question for this dish, I thought brown butter carried most of it's flavor in the brown bits that are the milk solids, so would the strained brown butter still have a lot of the flavor?

This is my first year growing Jerusalem artichokes and they are easy and attractive (tall with yellow flowers) to grow.

I found I suffered with terrible flatulence, after eating them is there anything can be done to offset this? I enjoyed your recipe but am nervous now to try it.
