every were use a fridge use a expensive back, but i cant do this but need to preserve meat. i need a way to modify my cellar. outside its unstable and will get stolen, in my apartment its impossible but cellars were used for thousends of years. but i know i cant hang it over my workbench

Dry age at home? Except most ppl don't have a vacume sealer to sous-vid the steak. You only showed this part for a split second ..i had to pause tobeven read it. I didn't even know what sous- vide was.... so thank you for that I guess lol.

From where i come from we eat the dark part of the dry aged meat and to be honest it tastes pretty good.
