Learning about different aromatic bases is what made me understand why I like certain cuisines and dislike others. I always knew I didn’t like the “flavor profile” of certain cuisines but learning the specifics was so enlightening.

In Thai cooking, the “three friends” is made of coriander root, peppercorn and garlic. It is most commonly seen in soups

In Indonesian cuisine it's shallot, garlic, and chili (and the kind of chili used is depends of the type of cuisine you make).

As someone of the Cajun culture, it brings me great joy that youve mentioned us in your video. Our culture was heavily stomped out from Louisiana, so much so that we only reside in a few parishes (what we call counties). Our sister culture, the Creole people, have a similar fate, being reduced to basically just a seasoning brand and a common word foreigners call us, getting our cultures mixed. It means alot to me, genuinely :>

It requires a simple yet elegant name . Name that is powrful yet humble, we shall call it ‘flavor ‘

In Mexican cooking, the trinity is onion, chile (any chile), and tomato. For the more complex dishes, we use dried or smoked chiles like chipotle or guajillo, but the more tame and quick dishes we use jalapeños or serranos
