Ingredients:-
1 kg chicken cut into medium sized pieces
2 cups fresh coconut grated
3 medium onions sliced
2 medium onions finely chopped
2 tbsp ginger and garlic paste each
1 tbsp chilli powder
½ tsp turmeric powder
4 tbsp oil
Salt to taste

For Malvani Garam Masala:-
15 red chillies
½ tsp cumin seeds
½ tsp black cumin seeds
½ tsp mustard seeds
1 tsp aniseeds
1” cinnamon
1 star anise
5 cloves
2 black cardamoms
10 peppers
½ tsp rock flower
½ tsp cassia buds
½ tsp nutmeg
¼ tsp asafoetida
1 tsp turmeric
2 tsp sesame seeds
2 tsp poppy seeds
1 mace
1 bay leaf
1 tbsp oil

Method:-
1. Heat oil in a kadai and sauté all the spices well till they spread their aroma and cool it
2. Once cooled grind to a fine powder and store in an airtight container.

The Curry:-

1. Roast the onion and the coconut together till the coconut turns brown and the cool and grind to a fine paste.
2. Heat oil and add the chopped onions and once they turn translucent add the ginger and garlic paste and sauté.
3. Add the chilli powder, turmeric powder and the malvani masala powder and sauté for a few seconds.
4. Add the chicken and sauté till the oil separates.
5. Add the coconut and onion paste and mix it well.
6. Add a liter of water, salt and cover and cook till the chicken in done.

Malvani cuisine is the standard cuisine of the South Konkan region of Maharashtra and Goa. Although Malvani cuisine is predominantly non-vegetarian, there are many vegetarian dishes. Although it is an independent cuisine, it overlaps Maharashtrian cuisine and Goan cuisine. Malvan is a town in the Sindhudurg district on the west coast of Maharashtra.

Malvani cuisine uses coconut liberally in various forms such as grated, dry-grated, fried, coconut paste and coconut milk. Many masalas have dried red chilies and other spices like coriander seeds, peppercorns, cumin, cardamom, ginger and garlic. Some dishes also use kokum, dried kokam (amsul), tamarind, and raw mango (kairi). The Malvani masala, a form of dried powder masala, is a combination of 15 to 16 dry spices. This masala is coarsely ground and stored in jars to be utilized when required. However, not all of the cuisine is hot and spicy; the Konkanastha Brahmin style of food is an example of less spicy food.

Fish dishes dominate Malvani cuisine. Solkadhi is a pink-colored drink made from the kokam fruit (Garcinia indica) and coconut milk.

Ma'am, rock flower is the wrong word you used for black stone flower. It's called dagad phool in Marathi, but you have translated it to rock flower which is misleading. It's called patthar ka phool in Hindi.

Beautiful kitchen.. Nice presentation. By the way the final dish seems to be a thin gravy whereas authentic chicken is bit of a thick gravy.

We add the coconut and onion paste at the last. ( in all malvani curry/ gravy dishes veg or non veg both).

Apart from fresh coconut, roasted dry coconut is also used in the paste.
