Chicken Tikka Madras (British Indian Restaurant / BIR Style)

A traditional hot curry sauce cooked with herbs, spices, green chillies and boneless chicken breast cubes marinated and cooked on the grill

## Ingredients ##
3 tablespoons of vegetable oil
1 bay leaf
1 inch cassia bark or cinnamon stick
2 cracked cardamom pods
1/2 a medium brown/white onion
2 green finger chillies
1 teaspoon ginger grated
1.5 teaspoons garlic grated
2 teaspoons tomato paste (mixed with 6 tablespoons of water)
1.25 teaspoons coriander powder
1/4 teaspoon cumin powder
1/4 teaspoon turmeric powder
3/4 teaspoon garam masala powder
1/4 teaspoon salt
1-4 teaspoons of chilli powder (heat 1:mild/2:medium/3:madras/4:vindaloo)
2 wedges of tomato
6-8 pieces of meat, vegetables, tofu or paneer
1/4 cup coriander fresh/chopped
250 millilitres curry base
## Method ##
1. heat the pan on medium and add the oil, bay leaf, cinnamon and cracked cardamoms and fry until bubbles for around the hard spices
2. add in the onion and cook until they begin to soften and become golden
3. add in the sliced finger chillies as well as the ginger and garlic and fry for 1 minute
4. tip in the tomato paste and fry off for 30 seconds to reduce the bitterness
5. now add the coriander powder, cumin powder, turmeric powder, garam masala powder, salt and chilli powder and stir through. Continue to cook until the oils start to separate
6. add half the base gravy, stir in and allow to reduce for a couple of minutes without stirring
7. add the remaining base and the tomato slices and stir through. Again allow to reduce for a couple of minutes without stirring
8. add your choice of protein along with the fresh chopped coriander and stir through.
9. allow to reduce without stirring unless it looks like it's about to burn until it's the consistency you require
10. serve decorated with a little more fresh coriander and some sliced red chilli
