You are supposed to smash the burger patty thin as soon as you put it on the griddle. That way you don't loose the juiciness out of the meat. This technique is used for quick-frying the patty for fast production of many burgers. The burger presses that hamburger joints use have ears on them so that the patty gets pressed into a fixed thickness.
I'm with you though, I like thicker patties (and still pink in the middle), and let them rest for a few minutes so the meat absorbs and retains the juices. Also, I don't use industrial hamburger for medium rare, or rare burgers, but grind up fresh steaks so as not to come down with E. coli.

Hi Jeff..got that Firman 7500 watt generator like new @ Lowe's for 47.00 bucks ..was store return ..they wanted 104.00 ..but I remember they want that stuff gone..so they took my 50.00 offer..then used Lowe's card...wow..it had the service report about it smoking ..but it runs fine ..go figure.

Actually on a griddle you are supposed to smash them and sear the burger to hold in the juices. You do not do this on a grill but you do do this on a griddle. And there's nothing better than a smashburger on the griddle. Especially if it's cooked in a little a bacon grease
